Atlantic Salmon Fishcakes with radish, citrus and dill salad
Enjoy our new Salmon Fishcakes, made with 100% Atlantic salmon, mixed with delicious, fluffy mashed potato and herbs, in our signature golden breadcrumbs. This citrusy, fresh salad pairs perfectly with the savoury goodness of our new fishcakes. Enjoy crispy radishes, a zing of citrus with peeled segments of orange, and fresh dill to create a dish packed full of flavour. This salad also adds a great pop of colour to your meal to any dinner, perfect served as a midweek dinner, lunch or even a date night treat!
2 Donegal Catch Atlantic Salmon Fishcakes
4 radishes, thinly sliced on a mandoline
150g watercress leaves, washed
1 orange, peeled and segmented
Handful of dill, roughly chopped
Drizzle of olive oil
Salt and freshly ground black pepper
- Preheat oven to 200 °C / 180 °C fan.
- Place the Donegal Catch fishcakes on a tray and place them into the oven for 30 - 35 minutes or until cooked through and hot throughout. (If using the airfryer, fishcakes take approx. 25 minutes but check your manufacturer's guidelines for best results and ensure fish is piping hot throughout when serving).
- Mix the radishes, watercress, orange segments and dill together in a large bowl then drizzle over a little olive oil and season with salt and freshly ground black pepper.
- Serve the salad with the cooked fishcakes.
