Ingredients

1 pack Donegal Catch Asian Style Salmon (2 darns)

150 g ramen noodles (2 nests)

400–500 ml low-sodium chicken or vegetable stock

1½ tbsp light soy sauce

½ tbsp white miso paste

1 cm piece fresh ginger, thinly sliced

½ clove garlic, thinly sliced

75 g spinach

75 g sweetcorn

2 spring onions, finely sliced

½ tsp sesame oil

Instructions

  1. Cook the Salmon (from frozen): Preheat oven to 200°C / Fan 180°C / Gas Mark 6. Wrap fillets loosely in foil and place on a baking tray. Cook for 30–35 minutes, opening the foil for the last 5 minutes to allow the salmon to lightly glaze and flake easily.
  2. Make the Broth: In a medium pot, combine the stock, soy sauce, miso paste, ginger, and garlic. Simmer gently for 3–4 minutes to infuse the flavours.
  3. Cook the Noodles: Add noodles directly to the broth and cook according to pack instructions. Stir in spinach and sweetcorn during the last minute of cooking.
  4. Serve: Divide noodles and broth between bowls. Top with flaked Asian Style Salmon, sliced spring onions, and a drizzle of sesame oil.
