Festive Fish Goujon Skewers

Ingredients

  • Donegal Catch Crunchy & Golden Breaded Fish Goujons
  • 1–2 roasted red peppers, cut into bite-sized pieces
  • 125g bocconcini balls
  • Wooden skewers
  • Lettuce leaves to serve

Instructions

  1. Pre-heat the air fryer to 180°C. Place half of the goujons (200g) in a single layer into the basket. Do not overfill the basket. Cook for 9-10 minutes or until crisp and golden. Turn halfway through cooking to ensure an even cook.
  2. Thread a piece of roasted red pepper, a bocconcini ball, and a cooked fish goujon onto each skewer. Repeat until all ingredients are used.
  3. Serve immediately while warm and crunchy.
