Ingredients
1 pack Donegal Catch Asian Style Salmon (2 pieces)
150 g egg noodles
150 g Green Isle Asian Stir Fry
(carrot strips, water chestnut slices, cut baby corn, green beans, red pepper strips, red onion slices & mushrooms)
1 tbsp light soy sauce
1 tsp sesame oil
Squeeze of lime
Instructions
- Cook the Salmon (from frozen): Preheat oven to 200°C / Fan 180°C / Gas Mark 6. Remove all packaging, wrap each fillet loosely in foil, and place on a baking tray. Cook for 30–35 minutes, opening the foil for the last 5 minutes to lightly glaze and ensure the salmon flakes easily.
- Cook the Noodles: Boil noodles according to pack instructions, then drain and set aside.
- Stir-fry the Vegetables: Heat 1 tbsp of oil in a non-stick wok or frying pan over medium heat. Add Green Isle Asian Stir Fry and cook for 5–7 minutes, stirring often. Add a few drops of water if needed to prevent sticking.
- Combine: Toss the cooked noodles with the stir-fried vegetables, soy sauce, and sesame oil.
- Serve: Flake the Asian Style Salmon over the top, finish with a squeeze of lime, and serve immediately.
