Donegal Catch Salmon Fishcakes: 4 portions ( 2 packs)
Lemon Couscous:
- Couscous: 240g
- Boiling water: 300ml
- Lemon zest: 2 tsp
- Lemon juice: 2 tbsp
- Olive oil: 2 tbsp
- Salt and pepper: to taste
Green Beans: 300g, trimmed
Paprika Aioli:
- Mayonnaise: 6 tbsp
- Smoked paprika: 2 tsp
- Garlic (finely grated): 2 small cloves
Lemon juice: 2 tsp
Instructions
- To cook the Fishcakes, preheat your air fryer to 180°C. Place the Donegal Catch Salmon Fishcakes in the air fryer basket and cook for 25 minutes, flipping halfway through.
- Place couscous in a large heatproof bowl. Pour over 300ml of boiling water, cover, and let sit for 5 minutes. Fluff with a fork, then mix in lemon zest, lemon juice, olive oil, salt, and pepper.
- To cook the green beans, bring a large pot of water to a boil and add the green beans. Boil for 5 minutes until tender-crisp. Drain and set aside.
- To prepare the paprika aioli, combine mayonnaise, smoked paprika, grated garlic, and lemon juice in a small bowl. Mix thoroughly and season with salt to taste if needed.
- Assemble and serve immediately. Enjoy
