Chinese Style Salt and Chilli Breaded Cod

Ingredients

2 Donegal Catch Breaded Cod Fillets

For the salt and chilli chips:

200 grams Green Isle frozen chips

1 tablespoon groundnut oil

1 onion, finely sliced

1 green pepper, finely sliced

2 garlic cloves, sliced

1 red chilli, finely sliced

1 teaspoon of ground black pepper

1 teaspoon caster sugar

1 teaspoon sea salt

½ teaspoon Chinese five-spice powder

½ teaspoon chilli flakes

2 spring onions, finely sliced

A few coriander leaves, to serve

Curry sauce, to serve, optional

Instructions

  1. Cook the Donegal Catch Breaded Cod Fillet and Green Isle frozen chips according to the packet instructions.
  2. Heat the oil in a large wok or deep sided frying pan and once hot add the onion and green pepper and stir-fry for 4 -5 minutes over a medium-high heat until the vegetables are cooked but not coloured. Add the garlic and sliced red chilli and cook for a further 2 minutes until the garlic smells fragrant. Remove from the heat and set aside.
  3. When the chips are cooked, mix the pepper, sugar, salt, chilli flakes and 5 spice together in a small bowl and then add to the wok. Tip the cooked chips into the pan along with the cooked onions and peppers and return everything to a medium heat, tossing to combine. Add the spring onions and toss everything together for 1-2 mins until everything is evenly coated, then serve straight away with the cooked Breaded Cod Fillet and some coriander leaves for garnish.
