Chinese Style Salt and Chilli Breaded Cod
2 Donegal Catch Breaded Cod Fillets
For the salt and chilli chips:
200 grams Green Isle frozen chips
1 tablespoon groundnut oil
1 onion, finely sliced
1 green pepper, finely sliced
2 garlic cloves, sliced
1 red chilli, finely sliced
1 teaspoon of ground black pepper
1 teaspoon caster sugar
1 teaspoon sea salt
½ teaspoon Chinese five-spice powder
½ teaspoon chilli flakes
2 spring onions, finely sliced
A few coriander leaves, to serve
Curry sauce, to serve, optional
- Cook the Donegal Catch Breaded Cod Fillet and Green Isle frozen chips according to the packet instructions.
- Heat the oil in a large wok or deep sided frying pan and once hot add the onion and green pepper and stir-fry for 4 -5 minutes over a medium-high heat until the vegetables are cooked but not coloured. Add the garlic and sliced red chilli and cook for a further 2 minutes until the garlic smells fragrant. Remove from the heat and set aside.
- When the chips are cooked, mix the pepper, sugar, salt, chilli flakes and 5 spice together in a small bowl and then add to the wok. Tip the cooked chips into the pan along with the cooked onions and peppers and return everything to a medium heat, tossing to combine. Add the spring onions and toss everything together for 1-2 mins until everything is evenly coated, then serve straight away with the cooked Breaded Cod Fillet and some coriander leaves for garnish.
