Light, crisp, and full of goodness — this Chunky Cod Summer Salad is a perfect way to enjoy a wholesome meal with minimal fuss. Served over a bed of fresh greens and cherry tomatoes, with a zingy mustard-honey dressing and flaky Donegal Catch Chunky Cod on top, it’s a satisfying yet feel-good option that’s high in protein and big on flavour. Ideal for lunch, post-workout recovery, or a sunny evening bite.

Ingredients
- (1 Pack) Use 1 or 2 Donegal Catch Chunky Cod Fillet (air-fried)
- 150g Mixed Irish Salad Leaves (Watercress, Rocket, Baby Spinach)
- 150g Irish Cherry Tomatoes, halved
- 1/2 Irish Lemon
- 1 tbsp Irish Rapeseed Oil (or Extra Virgin Olive Oil)
- Pinch of Irish Sea Salt & Cracked Black Pepper
- 1 tsp Mustard
- 1tsp Honey
- Optional: A sprinkle of Dulse flakes (Irish seaweed) for added minerals
Instructions
- Preheat the air-frier to 180°C. Cook Donegal Catch Chunky Cod fillet for 18-20 minutes, until it's golden and flaky.
- Mix the watercress, rocket and baby spinach. Add the halved Irish cherry tomatoes.
- Add mustard, honey and a squeeze of half a lemon and mix to make a quick healthy dressing.
- Drizzle the dressing over the salad. Healthy fats to help with post-workout recovery.
- Season with a pinch of sea salt and black pepper.
- Optional: Sprinkle some Dulse flakes for some extra Irish sea minerals.
- Serve in a bowl with salad, tomatoes and cut Chunky Cod in half and place on top.
