Crunchy & Golden Fish Goujon Tacos

Ingredients

  • 400g pack Donegal Catch Crunchy & Golden Breaded Fish Goujons (approx. 125g per serving)
  • Soft tacos or tortillas
  • ¼ red cabbage, finely sliced
  • 1 lime, juiced
  • 1 handful fresh coriander, chopped
  • 1 tub guacamole
  • 3 tbsp mayonnaise (or chipotle mayo for adults)
  • 1 tsp chipotle sauce (optional, adjust to taste)
  • Salt & pepper, to season

Instructions

  1. Cook the Goujons: Preheat your air fryer to 180°C. Place half the pack (200g) of goujons in a single layer in the basket. Cook for 9–10 minutes, turning halfway through, until crisp and golden. Repeat with remaining goujons if cooking the full pack.
  2. Make the Slaw: Finely slice ¼ red cabbage and place in a bowl. Add a pinch of salt and pepper, then squeeze over the juice of one lime. Mix in the chopped coriander and set aside to lightly pickle.
  3. Prepare the Chipotle Mayo: In a small bowl, mix 3 tbsp mayonnaise with 1 tsp chipotle sauce (add more or less to taste). For kids, simply use plain mayo.
  4. Warm the Tacos: Heat the tacos in a dry pan for 30 seconds on each side, until lightly toasted and warm.
  5. Build Your Tacos: Spread a spoonful of guacamole onto each taco. Add 2–3 crispy goujons, top with red cabbage slaw, and drizzle with chipotle mayo.
  6. Serve & Enjoy! Perfect for sharing, easy to make, and full of flavour — these tacos are a fun and delicious way to help your family eat more fish. For little ones, let them build their own tacos with their favourite toppings!
