Ingredients

  • 4 Donegal Catch Breaded Cod Fillets (from Family Pack of 6)
  • 400g baby potatoes, halved
  • 2 courgettes, sliced
  • 1 white onion, sliced
  • 1 red pepper, chopped
  • 1 lemon, cut into wedges
  • Olive oil, for tossing
  • Salt and pepper, to season

For the herby yoghurt drizzle:

  • 3 tbsp natural yoghurt
  • 1 tsp chopped fresh herbs (parsley or mint)
  • Pinch of salt

Instructions

  1. Preheat the air fryer to 180°C.
  2. Place the breaded cod fillets in the air fryer and cook for 18–20 minutes, flipping halfway through.
  3. Toss the baby potatoes, courgettes, onion, and red pepper in olive oil, season with salt and pepper, and air-fry for 18–20 minutes until golden and tender.
  4. Mix the yoghurt, herbs, and salt in a small bowl to make the herby drizzle.
  5. Arrange the fish and roasted veg on a large platter or bowl-style dish, drizzle with the yoghurt sauce, and serve with lemon wedges on the side.
