Festive Salt & Vinegar Haddock Bites with Potato Wedges, Cucumber Salad, Garlic Aioli & Spicy Mustard Dip

Ingredients

1 Pack x Donegal Catch  Salt and Vinegar Haddock Bites

  • Potato Wedges:
    • 250g baby potatoes
    • 1 tbsp. olive oil
    • 1/2 tsp. paprika
    • 1/2 tsp. garlic powder
    • Salt & pepper
  • Cucumber Salad:
    • 1/2 large cucumber
    • 1 tbsp. white vinegar
    • 1/2 tbsp. olive oil
    • Salt
  • Garlic Aioli:
    • 2 tbsp. mayonnaise
    • 1/2 garlic clove, grated
    • 1/2 tsp. lemon juice
    • Salt
  • Spicy Mustard Dip:
    • 1 tbsp. Dijon mustard
    • 1/2 tbsp. honey
    • 1/2 tsp. hot sauce

Instructions

  1. Air fry the Haddock Bites at 180°C for 15 minutes until crispy, ensure they are cooked thoroughly throughout. This product contains raw fish & must be cooked thoroughly. Ensure fish bites are piping hot before serving. These instructions are guidelines only as cooking appliances may vary. Cooking times may vary depending on the thickness of the fillets. Remove all packaging. Cook from frozen.
  2. If using an oven to cook the Haddock Bites: Pre heat oven to 200°C/Fan 180°C/Gas mark 6. Place haddock bites on a baking tray and cook on the top shelf of a pre-heated oven. Turn halfway through cooking time. Do not reheat. 20-23 mins, 200°C, Fan 180°C, Gas 6
  3. Toss potatoes with oil, paprika, garlic powder, salt, and pepper. Roast at 200°C for 20-25 minutes (or air fry for 15 minutes).
  4. Toss cucumber with vinegar, oil, and salt.
  5. Make Dips: oGarlic Aioli: Mix mayo, garlic, and lemon juice. oMustard Dip: Whisk mustard, honey, and hot sauce.
  6. Serve: Plate haddock bites, wedges, and salad with dips. Add a squeeze of lemon for extra zing and enjoy!
