Ingredients

8 Donegal Catch Fish Fingers (high in Omega-3)

800 g potatoes (for mash)

50 ml milk

25 g butter Salt and pepper (to taste)

150 g frozen garden peas

150 g frozen sweetcorn

1 can (400 g) baked beans

Optional: parsley or chives for garnish

Instructions

  1. Preheat the air fryer according to the manufacturer's guidelines. Cooking times may vary depending on the size and make of your appliance.
  2. Place the Donegal Catch Fish Fingers in the air fryer basket in a single layer. Cook for 10-12 minutes at 200°C, turning halfway through, until golden and crispy. Adjust according to your air fryer's instructions.
  3. While the fish fingers are cooking, peel and chop the potatoes. Boil them in salted water for 15-20 minutes or until soft. Drain and mash with butter, milk, and seasoning to taste.
  4. Boil or steam the garden peas and sweetcorn for about 5 minutes or until tender. Drain and set aside.
