
Fish Sticks with Potato Wedges, Carrot & Broccoli

An easy serving suggestion with our NEW Fish Sticks, helping you and your family get their two portions of fish a week. Serving with wedges and roasted caramelised vegetables, this recipe can be made in less than a half hour, making it perfect for week night dinners.

Ingredients
1 packet of Donegal Catch Fish Sticks
300 grams Green Isle potato wedges
3 carrots, peeled and roughly chopped
20 grams unsalted butter
1 tablespoon honey
Salt and black pepper
200 grams broccoli, chopped into small florets
Instructions
- Pre-heat Oven to 220°C / FAN 180 °C / Gas Mark 6. Place the fish sticks on a baking tray on the top shelf of a pre-heated oven for 15-20 mins. Turn halfway through cooking time. Cook the Green Isle potato wedges according to the packet instructions.
- Meanwhile, bring a saucepan of water to a rolling water and add the carrots, cooking for 5 minutes, until tender. Drain and add to a roasting tray with the butter, honey and a good pinch of salt and black pepper. Roast for 5 - 10 minutes until just starting to caramelise.
- Bring a second saucepan of water to the boil and just before serving add the broccoli and cook for 4 minutes, until just tender. Drain and then add to the roasting tray with the carrots, tossing everything together.
- Serve the Fish Sticks with the wedges and roasted veg.
