Ingredients

For the Fishcakes

  • 2 Irish Haddock, Chilli & Ginger Fishcakes

For the Couscous

  • 120g couscous
  • 150ml boiling water
  • Pinch of salt
  • Drizzle of olive oil (optional)

For the Tenderstem Broccoli

  • 200g tenderstem broccoli
  • Water for steaming

For the Carrot Salad

  • 2 medium carrots, grated
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • Salt and pepper, to taste

For the Chilli-Lime Mayo

  • 2-3 tbsp mayonnaise
  • 1 tsp sweet chilli sauce
  • Zest and juice of 1 lime

Instructions

  1. Preheat the air fryer to 180°C. Place the fishcakes in the air fryer basket. Cook for 25 minutes, flipping halfway through, until golden and crispy.
  2. Boil water in a pot. Place couscous in a heatproof bowl, season with a pinch of salt, and pour boiling water over it. Cover with a plate and let steam for 5 minutes. Fluff with a fork before serving.
  3. Bring water to a boil in a pot, place tenderstem broccoli in a steaming basket, and steam for 5-7 minutes until tender but still vibrant green.
  4. For the carrot salad, combine grated carrots with olive oil, lemon juice, salt, and pepper in a bowl. Toss well to coat.
  5. For the mayo, mix mayonnaise, sweet chilli sauce, lime zest, and lime juice in a small bowl until smooth.
  6. To serve, plate the fishcakes with couscous, steamed broccoli, and carrot salad. Drizzle or serve alongside the chilli-lime mayo for dipping.
