Ingredients
2 fillets Rye River Irish Pale Ale Battered Atlantic Cod Fillets
400g Potatoes (for mash):
- 30g Butter
- 50ml Milk
200g Parsnips (peeled and sliced into sticks)
1 tbsp Olive Oil
100g Kale
4 tbsp Lemon Aioli (t tbsp per person)
Salt and Pepper (to taste)
Instructions
- Preheat the air fryer to 180°C.
- Place the fillets in the air fryer and cook for approximately 20 minutes, flipping halfway through. Follow your air fryer manufacturer’s guidelines for best results.
- Boil the potatoes in a pot of salted water for 12–15 minutes or until tender. Drain, then mash with butter, milk, salt, and pepper until smooth.
- Toss parsnip slices in olive oil and season lightly with salt. Roast in the air fryer at 180°C for 10–12 minutes, shaking the basket halfway through
- In a hot pan, sauté kale with a drizzle of olive oil until wilted (about 3–4 minutes).
- Plate the cod fillets alongside creamy mashed potatoes, roasted parsnips, and sautéed kale. Add a generous dollop of lemon aioli on the side and garnish with a lemon wedge if desired.
