Irish Pale Ale Battered Cod Fillet Tacos
2 Donegal Catch Irish Pale Ale Battered Cod Fillets
For the salsa
150 grams cherry tomatoes, quartered
½ red onion, finely diced
Juice of ½ a lime
To assemble the tacos
6 small flour tortillas
½ head iceberg lettuce, finely sliced
- For the salsa, mix together the chopped cherry tomatoes, diced onion and lime juice with a pinch of salt and pepper and set aside.
- Cook the Donegal Catch Irish Pale Ale Battered Cod Fillets according to the packet instructions.
- When the fish is ready, assemble the tacos by piling them high with the sliced lettuce. Slice the fish into bite sized pieces and place on top of the lettuce then top with the salsa.
- Serve with the lime wedges alongside.
