Rustic Chips, Breaded Cod and Garden Peas

Ingredients

  • 1 pack Donegal Catch Breaded Cod (4 fillets)
  • Green Isle Rustic Chips (amount to suit your needs)
  • 300g Green Isle Garden Peas
  • 2 lemons, cut into wedges
  • Optional: 4 tbsp light mint yoghurt dip

For the mint yoghurt dip:

  • 4 tbsp Greek yoghurt
  • 1 tsp lemon juice
  • 6 fresh mint leaves, finely chopped
  • Pinch of salt and garlic
  • Optional: ¼ tsp honey

Instructions

  1. Preheat the air fryer to 180°C and cook the Breaded Cod Fillets for 18–20 minutes, flipping halfway through.
  2. Preheat the air fryer to 200°C and cook the Rustic Chips for 8 minutes or until crisp and golden, shaking occasionally for even cooking.
  3. Cook the Garden Peas according to the pack instructions, either by microwave or stovetop.
  4. Mix the yoghurt, lemon juice, chopped mint, salt, garlic, and honey (if using) in a small bowl to make the mint yoghurt dip.
  5. Plate each cod fillet with a portion of rustic chips and peas, and serve with a lemon wedge and a spoonful of the dip if desired.
