Salt & Vinegar Haddock Bites Sandwich with pickled red onions and salad
Enjoy our Irish caught Salt and Vinegar Haddock Bites in this simple, delicious sandwich. Our bites are made with 100% Irish Haddock Fillets and coated in a crispy salt & vinegar flavoured batter, to make the perfect taste combination for an authentic ‘chip shop’ flavour! The pickled onions add a slight tangy sweetness to the sandwich, add iceberg lettuce for extra crunch and curry or regular mayonnaise for a delicious lunch option.
1 box Donegal Catch Salt & Vinegar Haddock Bites
For the pickled red onions
2 red onions
Juice of 2 lemons
8 slices white batch bread
Curry mayonnaise, or regular mayonnaise
- Preheat the oven to 200C / 180 C fan.
- Place the Donegal Catch Salt & Vinegar Haddock Bites onto a baking tray and place into the oven for 20 minutes until cooked through and piping hot throughout.
- For the pickled onions, mix the onions, lemon juice and salt together - massaging together with your hands. Place into a bowl until needed.
- To assemble, spread the sliced batch bread with some of the curry mayonnaise - or regular if using - and top with some iceberg lettuce. Add a few of the cooked Donegal Catch Salt & Vinegar Haddock Bites to 4 of the sliced and then top with some of the pickled onions. Sandwich 2 slices of bread together, slice and enjoy!
