Salt & Vinegar Haddock Party Canapes

8 Donegal Catch Salt & Vinegar Haddock Bites
1 packet Green Isle Hash Browns
200 grams Green Isle Frozen Peas
1 tablespoon of salted butter
Zest of ½ a lemon
Handful of fresh mint leaves, finely chopped
Salt and freshly ground black pepper
- Cook the Donegal Catch Haddock Bites and the Green Isle Hash Browns according to the packet instructions.
- Whilst they cook, make the pea crush by placing the Green Isle Frozen Peas into a pan of simmering water and cook for 4 minutes then drain and return to the pan along with the butter and a pinch of salt and pepper. Coarsely mash with a fork or potato masher then stir through the lemon zest and chopped mint.
- To assemble the fish and chips bites, when they are cooked place the hash browns on a serving tray and divide the pea and mint crush between them. Top each with a Haddock Bite and season with salt and freshly ground black pepper then serve immediately.
