Salt & Vinegar Haddock Party Canapes

Ingredients

8 Donegal Catch Salt & Vinegar Haddock Bites

1 packet Green Isle Hash Browns

200 grams Green Isle Frozen Peas

1 tablespoon of salted butter

Zest of ½ a lemon

Handful of fresh mint leaves, finely chopped

Salt and freshly ground black pepper

Instructions

  1. Cook the Donegal Catch Haddock Bites and the Green Isle Hash Browns according to the packet instructions.
  2. Whilst they cook, make the pea crush by placing the Green Isle Frozen Peas into a pan of simmering water and cook for 4 minutes then drain and return to the pan along with the butter and a pinch of salt and pepper. Coarsely mash with a fork or potato masher then stir through the lemon zest and chopped mint.
  3. To assemble the fish and chips bites, when they are cooked place the hash browns on a serving tray and divide the pea and mint crush between them. Top each with a Haddock Bite and season with salt and freshly ground black pepper then serve immediately.
