Ingredients
- 2 Donegal Catch Atlantic Salmon Fillets (skin on, frozen)
- 400g potatoes, peeled and chopped (for mash)
- 120ml pomegranate juice (½ cup)
- 2 tbsp honey
- 1 tbsp soy sauce
- 2 garlic cloves, minced
- 2 tsp fresh ginger, grated
- Salt & pepper, to taste
- Pomegranate seeds, to garnish
- 1 spring onion, finely sliced
- Fresh parsley, chopped, to garnish
Instructions
- To make the glaze, add pomegranate juice, honey, soy sauce, minced garlic, grated ginger, and a pinch of salt and pepper to a small saucepan. Simmer gently for 10 minutes until slightly reduced.
- Place the salmon fillets in the air fryer and pour the glaze over the top. Cook at 180°C for 20 minutes, or until the salmon is cooked through.
- While the salmon cooks, boil the potatoes until tender, then mash with your preferred butter/milk/seasoning.
- Spoon the mash onto plates, top with the glazed salmon, and drizzle over any remaining glaze.
- Finish with pomegranate seeds, sliced spring onion, and fresh parsley.
