Festive Pomegranate & Honey Glazed Salmon

Ingredients

  • 2 Donegal Catch Atlantic Salmon Fillets (skin on, frozen)
  • 400g potatoes, peeled and chopped (for mash)
  • 120ml pomegranate juice (½ cup)
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 2 garlic cloves, minced
  • 2 tsp fresh ginger, grated
  • Salt & pepper, to taste
  • Pomegranate seeds, to garnish
  • 1 spring onion, finely sliced
  • Fresh parsley, chopped, to garnish

Instructions

  1. To make the glaze, add pomegranate juice, honey, soy sauce, minced garlic, grated ginger, and a pinch of salt and pepper to a small saucepan. Simmer gently for 10 minutes until slightly reduced.
  2. Place the salmon fillets in the air fryer and pour the glaze over the top. Cook at 180°C for 20 minutes, or until the salmon is cooked through.
  3. While the salmon cooks, boil the potatoes until tender, then mash with your preferred butter/milk/seasoning.
  4. Spoon the mash onto plates, top with the glazed salmon, and drizzle over any remaining glaze.
  5. Finish with pomegranate seeds, sliced spring onion, and fresh parsley.
