Ingredients
2 ripe avocados
1 small bunch of coriander (roughly 10-15g)
2 tbsp olive oil
2 pinches of salt and pepper (to taste)
300g crème fraiche or sour cream
8-12 fish fingers
8 soft tortillas
Mixed leaves (a handful per taco)
1/2 red cabbage (thinly sliced)
Pickled red onion (a few slices for garnish)
Fresh coriander (for garnish
Instructions
- Blend the avocado, coriander, olive oil, salt, pepper, and crème fraiche (or sour cream) until smooth to create the avocado crema.
- Air fry the fish fingers according to the cooking instructions on the product. Lay out soft tortillas and spread the avocado crema in the centre.
- Add a handful of mixed leaves and sliced red cabbage. Break the fish fingers in half and place them on the tortilla. Garnish with pickled red onion and fresh coriander. Fold in half and serve.
