Spicebag Sandwiches with Breaded Cod
2 tablespoons vegetable oil
1 onion, finely sliced
1 red pepper, deseeded and finely sliced
1 green pepper, deseeded and finely sliced
2 tablespoons spice bag seasoning
½ a red chilli, deseeded and finely chopped
2 garlic cloves, finely sliced
4 brioche buns, toasted
- Cook the Donegal Catch Natural Cod Fillets according to the packet instructions.
- For the spicebag, heat the vegetable oil in a large frying pan and add the onions. Fry for 3 minutes then add the peppers and fry for a further 5 minutes, stirring occasionally. Add the spicebag seasoning, chilli and garlic and stir fry for 2 minutes then remove from the heat.
- Spread mayonnaise over the base of the brioche bun then top with the cooked breaded cod fillets, followed by the spicebag seasoned peppers and onions and the lid of the brioche bun
- Serve with chips and salad.
